HEY HI HELLO AMIGOS! This week we are gonna cook some scallops (big, beautiful fat ones). I’m in Florida so we gonna have some tropical vibes happening cuz I am SICK OF TURKEY AND MASHED TATERS….I SAID IT! DON’T @ ME!!

FRESH TA DEATH! SPICE, ACID, SWEET, SALT

Recipe

5 large scallops (the bigger the better)

1 serrano pepper

1 lemon (zest and juice)

1 lime (zest and juice)

1 orange (zest and juice)

1 mango

1 handful cilantro

2 tablespoons olive oil

Salt and pepper


Are you ready for the freshnessss?!? Take your scallops and set them on a paper towel, dry both sides. Then remove the “beard”…the little flap on the side of the scallop. Slice the scallops in to “disks” as thin as you can. this can be tricky but doesn’t have to be perfect! Zest all citrus in to a small bowl. Now, juice all citrus in to same bowl with olive oil, salt and pepper. Arrange scallop slices overlapping on a big plate. Then pour citrus mixture over the top of them. Top with mango chunks, cilantro and serrano pepper. Now put that shit out as an appetizer for your fraaands or eat it in your underwear on the couch I DON’T CARE!

LEMONY SPICY FRESH AND PASTA…DUH

Scallop Linguine

Recipe

1 lb linguine pasta

8 large scallops (I use 2 per person)

2 lemons

1 cup parsley

2 tablespoons chili flakes

1 cup white wine

1/2 stick butter

1/2 cup parmesan

Boil some salty ass water for your pasta. While pasta is boiling get a cast iron pan SUPER HOT. Add a generous pat of butter into the pan then add scallops, brown on each side about 2 minutes. Set aside on a paper towel. Take pasta out of boiling water and set aside. Leave about a cup of pasta water for the sauce. Now back to our scallop pan, drain any excess butter. Add the rest of the butter on medium heat, then add parsley, chili flake, lemon juice. Leave on heat for 1 minute then add wine, simmer for 1-2 minutes then add pasta and reserve pasta water. Let pasta come to al dente then place in serving dish, top with scallops, parsley and parmesan.
