CORN

OH HEEELLOOOOO, I’m over here freezing with a head cold and my whole body hurts so we gonna pretend its SUMMATIME OKAY! We’re gonna make some delicious corn, maybe a little sweet maybe a little spicy, who knows!

CORN AND SAUSAGE CHOWDER

A little spicy, a little sweet, a lot delicious

Corn Chowder with Spicy Sausage

Recipe - 4 servings

5 ears corn or 2 1/2 cups frozen corn

1 1/2 cups buttermilk

4 hot Italian sausages 

1 shallot 

1 serrano pepper or jalapeno 

3 stalks celery 

3 stalks green onion

1 big handful cilantro

1 radish 

1 lime 

1/2 tbsp garlic powder 

1/2 tbsp coriander 

1/2 tbsp cumin

pickled onion (optional) 

Slice corn off the cob into a large bowl. Then chop peppers, celery, green onion, shallot, place in bowl with corn toss with salt and pepper. In a heavy bottom pot add a couple tbsps cooking oil and sauté shallot, celery, corn and peppers. About 6-8 minutes. Once softened add in spices cook another couple minutes. Then turn heat down to low and let the corn mixture cool a bit. Preheat a cast iron pan to med-high then cook sausages. I like to brown them on each side then throw into a 400 degree oven to finish, about 10 minutes, flipping half way through. Once they are done take out of the oven and let rest a few minutes. Slice sausages and garnishes. I used radish, pickled onion and a little of the cilantro. Then slowly start to add the buttermilk into the corn mixture. Once incorporated add cilantro and lime juice. Salt to taste then CLOSE YOUR EYES AND PRETEND YOU HAVE A TAN AND THE BEACH IS HOT AND NEARBY!

CORN POP CREME BRULEE

IT’S LIKE SOPHISTICATED CORN POPS!!

Corn Pop Creme Brûlée

Recipe - 6 servings

1 quart heavy cream

1 vanilla bean, scraped or 1 teaspoon vanilla 

1 cup sugar 

6 large egg yolks

2 quarts hot water

3 corn cobs or 1 cup frozen corn 

1 tsp salt

Preheat oven to 325 degrees. In a medium sauce pan, place cream, vanilla, corn cobs, salt. Heat to a low boil then immediately remove from heat and cover. Let that shit mingle and get delicious for 30 minutes. Then strain and discard corn. 

In a medium bowl, whisk together 1/2 cup sugar and egg yolks until its lighter in color. After cream has been strained, slowly whisk in to egg yolks. Once combined pour into serving dishes. I used 6 small ramekins. Fill 3/4 full. Then place in roasting pan and fill with water until dishes are covered halfway. Put in to oven for 40-45 minutes. They should be set but jiggly when finished. Let cool on counter for a few minutes then chill in fridge for several hours or up to 3 days. 

Once set and ready to impress the shit out of your friends, spread a tablespoon of sugar on each one. Making sure it is spread evenly. Using a torch, melt the sugar until brown and crispy on top. Oohhhh yeahh you’re officially the coolest dinner party host on the block, CONGRATS!!!
