GREEN TOMATO WEEK

NOT RED OR RIPE AND DEFINITELY NOT THE PRODUCT OF A FIRST TIME GARDENER ;)

OK so maybe you shouldn’t plant your tomatoes two months late BUT I DID. So, instead of juicy red tomatoes here are some examples of using their green little bastard children. This week is going to be vinegar laden so go get yourself some ‘matoes and vinegar!!!

PICKLED GREEN TOMATOES

Pickled Green Tomatoes 

Recipe 2 jars 

1 pound green tomatoes ( I used 3 large ones) 

2 garlic cloves sliced

1 sprig fresh dill

1 cup white vinegar (I used half red wine vinegar) 

1 cup water 

1 tablespoon kosher salt

1 tablespoon sugar

1/2 tablespoon whole black peppercorns

1/2 teaspoon red pepper flakes

1 tablespoon bourbon


Slice tomatoes, I did wedges but next time I’ll just use thick slices. Divide tomatoes between a couple mason jars. Pack those babies in real tight! Then throw garlic and dill in each jar. Take the rest of your ingredients and combine them in a small sauce pan. Put on stove on medium heat and simmer until sugar dissolves. Then add bourbon once you take pan off heat. Pour in to each jar and let that shit chill in the fridge for 3 days then eat those tart little bastards!!

Green Tomato Chili Sauce

THE ACID YOUR COCONUT RICE NEEDS

Green Tomato and Cucumber Chili Sauce

Recipe - makes 2 cups

1 large green tomato 

1 jalepeno (maybe more depending on heat, taste first!)

1/4 cup white vinegar

1/4 cup rice vinegar

1 teaspoon fresh coriander seeds (optional, only use fresh!)

1 tablespoon sugar

1/2 cup cucumber

1 generous pinch salt


Cut tomato and cucumber in to a medium dice, try and get them roughly the same size. Chop jalepeno finely. Make sure you taste your pepper before putting in!! Mine had the heat of the surface of the sun so I only used one. You may need another. Place all veggies in a medium bowl then add coriander. In a small saucepan combine both vinegars. You can use only white vinegar, add a bit more sugar if you do. Add sugar and salt then let dissolve. Take off heat and let cool completely. Pour over veggies and serve that shit!! Put it over some coconut rice (THE KING OF ALL RICES DON'T @ ME)
